Recipe of the Month: Orange Cranberry Muffins

Orange Cranberry Muffins

Makes: 48 servings


  • 4 oranges, cut up
  • 2 cups orange juice
  • 2 cups dried cranberries
  • 4 eggs
  • 2 cups butter
  • 7 cups flour
  • 3 cups sugar
  • 4 tsp baking powder
  • 4 tsp baking soda


  1. Cut orange into 8 pieces.
  2. Remove seeds.
  3. Combine with juice in blender.
  4. Purée.
  5. Add cranberries, egg, butter. Blend.
  6. Pour into bowl.
  7. Add sugar, flour, baking powder and baking soda.
  8. Stir to combine.
  9. Fill greased tins 3/4 full. Bake at 400 for 20 mins.
  10. Let stand in pans for 5 mins before removing.

  1. Oooh yum 🙂 this would be a nice recipe to make after Christmas with leftover cranberry sauce in perhaps.
